Hard seltzer stopped fermenting?

I'm trying to make a hard seltzer. I'm using ec1118.
I used the correct amount of yeast nutrient and kept it at 68 degrees. I checked it at the 2 week mark and only have a 1.020 sg. The og eas 1.032? Any ideas??
Was expecting .997 or 1.0
 
You need provide yeast nutrients.

I suggest using Fermaid O and following TOSNA calculations, although staggering may not be needed.
 
How are you measuring SG? If using a refractometer, you will get readings that are much higher than the actual SG due to the presence of alcohol. You need to use a calculator to correct for the presence of alcohol, in order to get a reasonably accurate measurement. Always use a hydrometer for FG measurements for the best accuracy.
