After a few batches now under my belt, I've accomplished some good things with my hard seltzer. (right flavor ratio, hitting my gravity, etc). However, I'm having problems with getting the carbonation when bottling.
Latest batch I made was SG 1.034 & FG of 997. I used Red Star cuvee yeast for fermentation. Since I had the same problem last batch I added a bit more priming sugar (about 4 oz for 5 gal batch). After 6 weeks I still just have flat seltzer. Any tips to what is the issue? I somehow think it may be the yeast I'm using. Is the solution to sprinkle some yeast in when bottling?
