Greetings from DesMoines, WA! Newbie here,

I have been reading the forums for a while and thought i would join up!

I have just made my 3rd batch, (Munton's Old Ale kit, extract only with yeast packet from kit)

it was funky, I may dump it, but its only been kegged for 2 weeks.

I think it went bad when the temp in my basement fermenting room(closet) dropped to 50 degrees during the primary, and i let it sit in the yeast for a few days longer when I couldn't rack it when i wanted to. Could the temp affect the yeast that much? Also, could letting the beer sit in the spent trub for a week affect the taste? (I have looked around and have not seen any threads on this)

If it went bad because of sanitation issues i may go crazy, because the last few batches over the years have had the same aftertaste, and I can't think of anything more i could do to sanitize my equipment.

thank you for any input!

First welcome to HBT

Next DO NOT DUMP THAT BREW, temps dropping would not be an issue high temps can give off flavors but low temps will not. All it would do is slow fermentation. Also a couple of days longer in primary does not matter at all either.

Give it time to age and Im sure it will be a brew you will be proud to say you made.

The twang you are getting might be the extract twang people talk about.

Welcome to HBT from a fellow Washingtonian.
As Joker said, do not dump the batch. let it mellow some more in the keg.

Also, you may try switching from LME to DME and see if that helps with the aftertaste you're talking about.

Time will improve it greatly. If it doesn't taste great, let it sit (preferably at room temps) for a month or so, try it again.

Thanks for the advice, I'll put the keg away for another week or so and see if it improves.

I bought a small heater fan with a thermostat for the next batch so I can make sure i keep the room at 70 for the full primary, then rack it into another carboy for a secondary.

thanks again.

I have had brews that didn't improve much for a couple of months. Brewing = patience.
