BB Bold Holiday Ale:
Starting Gravity: 1.070 - 1.078
Final Gravity: 1.010 - 1.016

I got:
Satrting Gravity: 1.058
8 days Later: 1.025

**. Tasted it and it did taste a bit watery...but did taste like Beer!!!! Good Sign.
**. Should I leave it for another week or put in a secondary??? Thanks in advance.....
 
Time is always on your side. I for one always primary for 10 days and secondary for 10 to 14 days. I find that giving it that extra time in the fermentors makes a difference overall.

I do exactly the same thing. It really should not be moved to secondary until it has reached the expected FG or very very close to it, because once you move it off the yeast it will probably slow way down and can halt active fermentation.
 
I don't think I have ever move a beer to the secondary until at least 14 days and normally more.

I'd be wondering about being 20 off on the OG ??
 
I am guessing that you didn't stir well enough after topping up and you got a bad measurement. Missing SG on an extract with steeping grains is pretty close to impossible (you basically have to over or under fill)
 
I second the not stirring. It's very easy to add the top off water and get a low gravity by not stirring. Just for the sake of argument, assume you hit the target OG. From 1.074 to 1.013 would be pretty high attenuation for an extract kit, and if you carmelized any of the extract during boil, 1.025 would be only a little high from expected FG. So another week (or two) in primary would probably get you to under 1.020. Give it a little time, and it will get better.
