I am playing with an IPA recipe that is attempting to be Extremely citrus forward. I was playing with the idea of adding bitter orange and grapefruit peel at flameout to accentuate the citrus hop qualities. Any advice on hop additions and or the use of citrus peel?

10 lb 2-Row
.5 lb Caramel 40
.5 lb Carapils
.4 lb Honey Malt

Hop additions
1 Oz. Centennial (60 mins)
.2 0z Mosaic (20 mins)
.5 Oz Citra (10 mins)
.8 Oz Mosaic (5 mins)
1 Oz Galaxy (5 mins)
1 Oz Citra (Flameout)
1 Oz Mosaic (Flameout)
1 Oz Galaxy (Flameout)
.75 Oz. Bitter Orange Peel (Flameout)
1 Oz. Grapefruit Peel (Flameout)

Dry Hop
1 Oz. Citra
1 Oz. Galaxy
1 Oz. Mosaic

Any suggestions on Grain Bill or Hop additions are welcomed.

I would add the peel to the secondary. Slowly slice the peel up, then add the strips to the carboy before racking the beer. If you turn down the finishing hops, the citrus might come through a little better. Try this:

1 oz centennial 60
1.2 CGM 15
1.5 CGM 0

Skip the dryhops the first time around. See what you think.

Thanks for the tip. I was toying with the idea of adding it to the secondary. Seems to be the best way to go, since a lot of the citrus qualities may dissipate after a vigorous primary.

I made a grapefruit zest IPA for an iron brewer competition. Here is what I did/found.


Zest(not peel) only of 2 grapefruits added at flameout. That definitely weighed out to be more than 1 oz and the flavor was definitely noticeable, in a similarly aggressive late hop bill.

My suggestions would be to drop the bitter orange completely, or use fresh orange zest. I dont think the bitter orange is going to give you the flavor you are looking for. I may drop the honey malt to .25, but that's personal preference. Other than that it looks good.
 
Thanks! Great tip, I was concerned about bitter orange peel, as it wouldn't give me that fresh orange flavor I was going for. I think I may try blood orange zest, since it's in season.
