sooo, i have been making Edworts apple wine for some time now. now i have been changing it out here and there with grape juice. 3 gals of apple and 2 of grape. my last batch was all grape and still using the Montrachet yeast, seems the dry from the yeast and the sweet of the grape juice are fighting each other in the taste. any suggestions on a different yeast for grape.
i want to make this again and change it up...:D

I buy grape juice at Aldi; I like to mix half white grape juice (Niagara) and half purple (Concord), and add a little sugar to get to about 20 Brix. It's been a while since I've made any, so I can't remember what yeast worked the best. It doesn't age very well until you add sulfites, but if you drink it young or make sparkling wine you can probably leave out the sulfite (Campden)
