I got an itch to make a mead. I blame it on the governor, he legalized rec use and here I am. After some soul searching, I ended up with a concoction of:
~1 gallon of honey
2 pouches of Mango extract
2 lemons, zested and juiced
5" of ginger root, thinly sliced
1 tsp of black peppercorns
water to 5 gallons
I made a teabag of cheese cloth for lemon peel, ginger root, and peppercorns.
I dropped in 1122 yeast and a tsp nutes
beginning S.G. 1.10
aerated twice a day

She started strong, with a nice head. After two days, it has died down considerably. I measured S.G. at 0.9 pH at 3.2

Any suggestions?

Another concern...apparently the seal on the lid to the bucket is crap.:mad: The must is covered, but not airtight.
 
Don't worry about it. I ferment in a bucket with a loose cover of aluminum foil. Once fermentation dies down you can rack into another more appropriately sized vessel with little headroom for some aging. I do 1.25G batches in the nearly open bucket racked into 1G jugs with an airlock for aging.

The fermentation went awfully fast, like 2 days. It went from 1.10 to 0.9. Should I worry?
