I'm planning one once I move from Aluminum to SS kettles. I will probably kettle sour with grain and a CO2 blanket. I tried a Berlinner a few years ago with a lacto pitch and it was 1 of 2 dumpers I've ever had. I'll say it was probably another infection (my only one to date) and not the method used, but it was horrific.
