Good Temperature for Abbaye Yeast in Heavy Ale High in Wheat?

I'm using 13.5 pounds of grain, including 5 pounds of wheat, to make a fake Belgian beer. Target OG 1.084. I'm including a pound of table sugar. All Sabro.

What's a good temperature for fermentation? Some people say seventies. Some 68. I want a little burn, but not a banana overload.

I see Denny Conn recommended 65 for this kind of fermentation. Cautioned about bubble gum flavors.
 
I see a brewing site says cool temperatures shift the esters from bananas and tropical flavors to things like raisins, figs and dates. Sounds like St. Bernardus Christmas Ale, which I like, apart from the coarse aroma. I think I'll go for 65.
