Anyone got a really good Hefe recipe that can be made with extract?
I really wnat to try one, but am not up to an AG recipe yet.:mug:

Also, how do Hefe's do in Corny Kegs? ( as far as priming and caronating?)
 
Easy as hell Hefe

6lbs Wheat DME
1 oz Hallertauer 60 mins

1 vial White Labs Hefeweizen Yeast

This was one of my first brews. I was really impressed. Just be careful and watch for blow offs, and keep the temp right around 68-70
 
I used this recipe and it turned out AMAZING. It's really simple, too.
A case of it disappeared in one night at my friend's housewarming party when it was sitting next to a keg of Shiner Bock and a keg of BMC.

0.13 lbs. Acid Malt
0.25 lbs. Aromatic Malt

7.8 lbs. Generic LME - Wheat

1.00 oz. Hallertauer 60 min.
0.25 oz. Spalt 15 min.
0.25 oz. Perle 15 min.

1 Tablespoon Maltodextrin 60 Min.

White Labs WLP300 Hefeweizen Ale

Steep the Acid Malt and Aromatic Malt for 30 minutes at 150 degrees, then remove grains and bring to a boil then follow your normal extract brew schedule.
 
This is my favorite extract Hefe recipe. It is from my LHBS. Basically the same as Chimone's but with LME and some steeped Munich malt. They are best consumed young. Hefe's are fine in a keg. I keg mine, but I force carbonate. Hefe's don't last long around my house. This recipe is an image file. If you want it just right click it and save to your desktop.

I brewed your recipe today! I used 8 oz. of Munich and 6 lbs. of Wheat LME (I didn't feel like wasting 3/4 lb. of the Munich so used more to compensate for the fact that I was .5 lb. shy on the LME.)

I used the Weihenstephen yeast smack pack. Everything turned out fine. The kraeusen is forming as we speak.

Cool! Let me know how it comes out. I think you will be pleased. I find that people either love or hate Hefe's. No middle ground it seems. Two weeks in the primary and drink it up!

I love Hef's if they're done right. I've had some really good ones. I tried a couple a few weeks ago: the Shiner Hef and the Widmer Hef.

I was not impressed with the Shiner. Just not enough of that signature Hef spicy character.

Widmer was better, but still a little too easy on the flavor for my taste.
