Gonna brew a gose Saturday morning. Should I pitch lacto Wednesday or Thursday night? I don't mind the sour-

Also, should I use coriander if I plan on dry hopping or using watermelon?
 
let us know how the "good belly" product works. Are you going to re pitch lacto after the boil or is it going to be clean in primary?
use dry hops and water melon as you wish by the time your dry hopping its not going to affect your cultures.
 
For the Good Belly stuff, i suggest finding your way to the Lambic & Wild brewing subforum; good stuff there. From what I've read, creating a starter from the Good Belly 2-3 days before pitching into your main wort is a good idea in order to build the culture while ensuring no contamination has occurred.
 
I used the Goodbelly juice once with great success. Collected my wort on a Thursday evening, pitched a pint of the Goodbelly juice. By Saturday morning, the pH was down to 3.01. Did a quick boil then fermented as usual. Worked really well, and is way cheaper than the lacto blends I've bought in the past.
 
I skipped the starter. Most sources mentioned it's not required. I'll boil before fermentation.

I went ahead and picked up some huell melon for the watermelon. The other fermenter will be closer to traditional. So..

Batch one- 5.5gal, 2oz huell melon dry hop with watermelon extract. WLP644

Batch two- 5.5gal, no dry hop. WY1056/WLP862.

Both batches get a 1/2oz Saaz at 60. Would you guys use coriander on the watermelon batch?

I have the same question as I'm looking to do a watermelon gose in the near-ish future. I would guess yes, but I'll wait to hear from someone who's done it.
