Has anyone ever done it?

I have been looking to clone Oberon after recently having it and was going to do a 45%/45% Wheat/2 Row with 5% Munich and 5% Crystal 10, but after having success with GNO in a NEIPA I was wondering how it would pair with a wheat beer.

Basically sub the GNO for the Crystal 10.
45% Wheat
45% 2-Row
5% Light Munich
5% Golden Naked Oats

Nugget for bittering, Saaz and Hersbrucker Hops for aroma towards end for 30 IBU with a light (.5 oz of each/5 Gal) dry hop of Hersbrucker and Cascade.

Ferment with Bell's harvested yeast at 70-72° for more fruity esters.

I have added GNO to a couple of wheat beers with great success. I learned on the first brew with GNO that the name is a bit deceiving. It is a crystal malt and not a naked oat, as the name implies, but seems like you are aware of that. Once I made that connection, I've had good results doing just what you are doing, sub it out for the other crystals.

I made a wheat the almost exactly like you are describing. The grain bill looks good and the GNO will add a little bit more mouthfeel and body than the Crystal will, while still adding the residual sweetness you get from crystal malts.

Good luck and let us know how it works out.... I recommend a double decoction for the mash for some malt complexity.
