Good Day Everyone

I am going to make a mead this year. I am planning on making a cyser as I am enjoying making cider right now. I have the yeast and the honey I am going to us but the stuck on the apple juice. I could pay more for fresh stuff from last year, use store juice lots of people do this or, wait till the fall to get some fresh juice.

I want to go with option 2 as I like to start it now and maybe have it ready for new years. There may be a way to do option 1 but it that be hard with working 2 jobs to get somewhere that sells it at a good price. Should I wait or go ahead and start as I don't want to waist the honey?
 
I understand your dilemma, as I was there a month ago. I would always choose fresh pressed juice from a local mill, but as you said you have to wait until October for that. I decided on using frozen concentrate, a first for me. Ask me in 4 months how it worked out :)
 
I used store bought juice to make a cyser that I liked. Are you using store juice to make your ciders? If yes and you like them, I think you'd like it in a cyser. If no, maybe try a small batch of cider with it and see what you think. Good luck!

I have done 3 ciders with fresh juice and have my first store bought cider going. It smells good but I did though some apple slices into it as well. Its almost time for racking as the fruit is over 2 weeks old
