Going from primary to secondary

I was thinking about the whole going from the primary to secondary step of beer making and was wondering what you do with all of the particulates that are invariably being created in the primary during the fermentation process. It is my understanding that these settle on the bottom of the primary. Are they supposed to stay there or do they go into the secondary too?

Those particles are called the trube (troob). They settle in the primary and ideally, you want to leave them there, thus the necessity to be very careful when you rack from primary to secondary. Everyone has a different way of doing it. Of course, the primary must be higher than the secondary if you are going to use a siphon. I also tilt my primary by putting a 2x4 block under 1 side. This allows me to get more wort out. As far as what you do with the trube/sediment, you can throw it out, use the "yeast cake" to ferment your next batch, or perform yeast washing. Do a search on:
