Brewed a GL Christmas Ale Clone last Saturday. It calls for 2 cinnamon sticks and 1 oz of ginger root in the last 5 minutes of the boil. OG was 1.075 and I tasted the sample and it had a strong flavor of the cinnamon and ginger. I just racked into the bottling bucket and the FG is already 1.016. This sample had much less flavor from the spice. I was going to leave it until next weekend and then keg. It is not dry hopped, but I was thinking of throwing 2 cinnamon sticks and slicing some ginger root and tossing it in the secondary to get back some of that spice flavor. Any thoughts?
 
Maybe split the batch into 2; dry hop one, leave the other as-is. Worst case is you wind up with one good 2.5 gallon batch, and one mediocre 2.5 gallon batch
