I wanted to make a Ginger Grapefruit Wheat Beer, so last Thursday, I made a grapefruit zest syrup mixture and pasturized about 3 oz of ginger and racked the wheat from the primary into the secondary ontop of the zest and ginger.

Last night I pulled a sample and I found a pretty decent beer in the making. The ginger was definitely at the fore front, with the grapefruit acting as an afternote. If it stays at this level, I'll be pretty satisfied with the beer. However, it's only been 4 and a half days since racking. Will the ginger flavour continue to get stronger in the beer for the next 10 days while its in the secondary? Or will the ginger flavor taper off? I like where it's at now, but I think a really strong ginger flavor will ruin things.

Thanks

my experience with Ginger is that is mellows over time. I use it in my Rye Ale I like to brew in the summer. Give it about 30 days.
