So I'm brewing Ginger beer and I've used this recipe:

2.5-3 pounds Ginger
2 cups brown sugar (additional 1 cup added at end for carbonation)
1 cup lemon juice
1 gallon water
1 packet lalvin EC1118

the steps summed up is grate/pulp the ginger then boil it while disolving brown sugar and lemon juice in the water. bring mix to room temp and and add yeast.

The Ginger Taste is very overpowering and I'm wondering if I can add something to the recipe to mellow out the flavor and balance it. Any suggestions/ refinements?
 
You used 3 POUNDS ginger on one gallon!?!?!

Mate, I go with around 50 to 200g for that amount of water, and 200 is already quite strong.

You used waaaaaaay to much ginger. Water it down, add some sugar and ferment again.
