Decided to brew tomorrow (today) at work. My first IIPA!!!! 284 IBUs Calculated. I had some saved wort in the fridge from the vienna/cent smash and had planned to use it as starter wort. Stupid me forgot that I didn't boil it after the mash so, of course, it had complete conversion. So I ran up to the shop after 1 am, grabbed some DME and a vial of 001. Starter's chilling down now.

Steam burns aren't fun.

Got the stout kegged today and the mild is now cold crashing. I'm betting by tomorrow night it will be pretty clear (S-04) so I'll probably keg it tomorrow night. Dry hopped with two ounces in the MO/Amarillo SMaSH and the Citra IPA has been on dry hops for 3 days now. It's almost clear and has been at room temp for a while now, love 007.

Vienna/Cent SMaSH is officially gone and I think I have about half a pint left of the Hop Burst APA left. I'll be dumping at least one beer, but maybe two, to make room for my new line up.

Sounds like fun, Chris.

I am doing all kinds of weird stuff with this beer I am brewing. I started mashing at about 7 pm last night at 150... and it's still sitting at 130 degrees in its cooler now - I really wanted the acidulated malt to have plenty of time to do its thing. I'll start sparging around 11. This is also the first time I used rice hulls - just in case all the proteins decide to gum up the braid.

I decided not to do a starter with the vial of WLP 400 that I picked up from the shop yesterday.

I still have not decided what bittering hop I want to use on this. It'll probably end up being Magnum, but I am tempted to use something more exotic.

I'll be dumping at least one beer, but maybe two, to make room for my new line up.

I am sure you can find some people to help you finish those off quickly instead of dumping them...
 
IIPA is done. Get this, I sparged and I chilled! gasp.

BTW, don't let Ed take over your hop additions. He threw in an ounce of Simcoe 30 minutes too early. It was suppose to be 284 IBUs, but who the hell knows now. I lost 2 GALLONS to hops!!! There's hop matter covering the back parking lot now and the grains from Felipe's brew night are still there. Moldy, but still there.

Ed also witnessed me take a chunk out of my thumb with a racking cane. Same hand as the steam burn mentioned above.

Just got done kegging the Mild and pitched my 2000ml starter into the IIPA. The stout is growing on me. Bought another keg today, too. It's been a good week.

Now I'm off to party with Ed and Barron and try not to get too ****faced.
 
Hey guys, I'm up in Queens at the moment, but last night went to a place in Manhattan that advertised that they had two beers: a "dark" beer and a "light" beer. It was an Irish place so I figured it would be Guinness and Harp (yuck). Turns out it was a Porter and a Bitter (or maybe a Mild) and it was fantastic! Totally confirmed that I am doing a mild or a bitter when I get back. I had my beak in the glass the whole night.

well that's a nice surprise.

IIPA is churning away happily. I'll be heading up to the shop after while to pick up my equipment and try Jason's new Double Simcoe IPA.

I challenge you to find something better than watching Skip do karaoke at 4 am.
 
So we've been talking about doing a competition at the shop. No, not some BJCP sanctioned thing, just a couple guys drinking the beer and declaring a winner. But you pick your ingredients by look, taste and smell. We'd set all the grains and hops out unlabeled and you'd chose from those. The only thing you'd be sure about would be the yeast.

This is just an idea. If you've got another idea, throw it at me. Winner would get a gift certificate to the shop probably.
 
Sweet, looks like the starter worked well. Also glad the change in hop addition didn't hurt the flavor. I'm psyched about how this will turn out.

Glad to hear the iipa is going well! Going to dryhop mine today if I remember.

Also confirmation on that taste being tap. Te mild tastes like it , the hefe not so much, the winter one smells like it :(

also, I am down with the smell competition. But you (shopworkers) will win I have a feeling. I have no idea what the grains taste and smell like. (except mo)
 
on a separate note Chris, I'm glad you chose cascade as a flameout for my IIPA. I love their smell but their taste is just not for me. I hope I didn't get too much taste, but the centennial will probably overpower.
 
****, i wouldn't be that good at it, especially hops. I don't know if I'd even be allowed to enter or if I'd be a "judge". I think it'd be fun though. Everyone planning on going to the tailgate Saturday? I've got the mild and stout carbing up now so I'll probably take one of those. I was in the shop yesterday with Barron. He picked up three recipes so he could brew tonight. I look forward to trying them saturday. -_-

Let me know when you guys want to get together again. I'm always free for a bro-down (with girls, Matt). I guess you could call that a bra-down.
 
The game is at 12:30 isn't it? yeah definitely count me out of this one :D

but I am down for a brodown. this week is hell for me :(
 
we should get together saturday night. Sarah's going out of town for a week on Saturday, I'll be all alone. I'm definately down if you guys wanna chill sometime during the week, too. Maybe everyone buy a six pack and we mix and match.
 
Im tied up till thursday at noon. this weekend is pretty tied up also, i have a friend from highschool that's getting married next week so we are having a little fancy party for him saturday night to celebrate the wedding. plus we haven't seen him in a year or two.

:( Damn conflicts!!! but fear not! The IPA should be ready by next time!
 
ok it's gotta be tap. it's the only thing I think I changed and all of a sudden 5 batches taste like poolwater....

this is going to be a lot of dumping....
 
my double IIPA is already down to 1.022. Just pitched this 11/14. This stuff tastes delicious. When the krausen dies down I'm going to pitch the 1.5 lbs of dextrose in.
