Funny taste possibly from topping up

I made the Cenntenial Blonde recipe I forget who the member is from this forum. I've made it before and turned out great. I wanted to make it again.

I made it about 2 months ago 3 weeks primary 3 weeks in keg/bottle. I kegged most of it and kept a 6 pack bottled. The problem is it doesn't have the great clean taste with nice hop aroma/taste. Its got this not so great taste I can't really explain. Its not undrinkable but no where near as good.

The only thing I can think I did differently is add more water after the boil to increase my final volume. I'm thinking this is giving it something similar to DMS where it has a corn flavor or I've diluted too much and not getting the normal flavor from it.

I only put maybe a 1/2 gallon maybe a gallon at most of water in at the same time I added yeast. Can't think of anything else I did differently.

Any ideas other than making a batch again to rule out my theory? I probably will though its a great recipe. It will still get drank lol.
 
I would recommend trying to determine your OG/volume issue prior to transferring to the fermenter, rather than after. When in doubt your focus should be on the proper OG rather than volume. Once you get your process and OG dialed in, make minor adjustments to achieve the volume you are looking for.

Biermuncher's Centennial Blonde is a great beer, hope you have a chance to dial everything in and see what it's all about!
 
Yea the first batch I made was great. I guess I'm just wondering if anybody had similar problems and knew if topping up to get more volume was the issue with the taste I'm getting. I can't think of anything else I did differently. It still has it a week later. Its a strange taste. Sort of what I imagined an over aerated beer would taste before bottling. The cardboard taste.

I'm leaning towards I've just thrown off the balance adding extra water and that's coming off as a weird taste.
