I am aware that when doing a full boil extract one needs to begin with 6.25 - 6.5 gallons to allow for evaporation... what I'm iffy on is do I start with 6.5 gallons and then add extract or start with 5.5 gallons and get to the 6.5 when adding nearly a gallon of LME?
 
When we add certain amount of LME it will increase total amount of wort, so as said that should be total volume.

Why dont you simply use some software to calculate it for you (eg Brewtarget whis is free)?

Before my 1st brew (which was full boil) I tested my equipment to find out what is my evaporation rate. After that I insert results in BT and get all amounts of ingredients for certain volume of beer I want to brew.

im kidding, dont do that. is your target boil volume 5 gallons?
