I'm looking at making a ginger and rhubarb beer( no hops involved just a proper ginger beer with rhubarb added) and thinking about fortifying some of it with a bottle of rum.

Any ideas on good ratios of beer to spirit?

Any other advice gladly listened to.
 
I would recommend adding 1 ml of rum at a time to 100 ml of your finished beer until you get the ratio you want for the full batch. Really it could be anywhere from beer to cocktail, depending what you’re after.
 
I did a cream ale this spring and added about a cup of rubarb jam to the second ferment. This worked real well- I plan on making this again. If you put more jam in, that would pump up the abv. At bottling I added a saison yeast and had brut like carbonation.
