I had a witbier sitting in a primary fermenter for a couple months and finally bottled it this week. I forgot to check the FG. Should I worry about bottle bombs? How could I test fg after bottling? Is there a good method of decimating it?
 
You could open one of the bottles and let it go flat and measure that. The amount of sugar added for carbonation won't affect the gravity much.
In reality if it sat for a couple of months you don't need to worry about bottle bombs if you were careful in measuring the amount of sugar you added to carbonate. The yeast had plenty of time to chew through the initial sugars.
 
After "a few months" I'm quite sure your beer is done fermenting. Only way to mess it up now would be to add to much priming sugar.
