Dumb, dumb, dumb. Too many cooks in the kitchen and I forgot to put in the yeast. I aerated the wort with O2. Put the yeast in the next morning. Did I really foul up?
 
Thanks. I went ahead and put in the yeast the next morning after shooting up out of bed at 6 am. About 12 hours later we had a rolling boil. Already put it into the incubator at 70-68. This may be our best batch ever. I'll let you know. BTW my " incubator" is named " BIG MOMMA " in honor of my late grandmother. Holds 6- 6 1/2 carboys.
 
Hi Clark, I'm intuiting that you can control the temp in your 'incumbator' - is that right? If so, you might consider turning it down a little, closer to 60 than 70.
 
Yes, I have control of the temp. This is an ale so that is why, (my brew meister told me), it is at 68-70. I can easily turn it down.
 
That sucker is going to generate heat, I think what your brewmeister meant was that the liquid in the fermentor should be 68 to 70, which means you need to turn the temp in your chamber to 60. A vigorous ferment could generate 10 or more degrees, so your wort will probably be up near 80.
 
Get a stick-on lcd thermometer strip for all your fermentation buckets. They are like $1 from the LHBS. I have not noticed a ten-degree climb though, IMHO.. maybe 2-5 degrees but im no pro!
