I put this together after brewing a porter with a similar grain bill. I've never used brown sugar in a stout, and would like to know what flavor profile it leaves.


6 lbs. extra light DME
2 lbs. chocolate malt
.5 lbs. black barley
1 lb. crystal 80
1 lb. flaked oats
1 lb. 2-row
.75 lb. dark brown sugar

2 oz. Norther Brewer hops @ FWH

S-05 yeast


Should come out to around 6.5%. Notes are appreciated.
 
Brown sugar tastes like nothing in the final beer. You can use it for color but don't expect any molasses flavor from it. If you like molasses then just use a tiny amount of pure molasses. A couple of ounces is all you need as it is very strong.

2 lb is an awful lot of chocolate malt. I would take that down to about 1/2 lb.

Looks good otherwise. I would drink it. Hope you enjoy it.

I have an FES in the keg ATM.
My Specialty for 5.5 gallons
@ 74% efficiency
400g Pale Choc
200g Roast Barley
320g Medium Crystal (60)
100g Dark Crystal (90)
up to 1.066 with pale malt, for all grain.
if you want to add some oats or flaked barley feel free, maybe 1lb would be good.
