Hi all. Trying to do a batch of root beer, but had a few questions.
I see a lot of recipes that use yeast, but I plan to force Carb/keg it. Do I need less sugar if not carbonating with yeast?
Have a bottle of shanks extract I'm planning to use. Planning 1oz of extract to 1 gallon water, and 1.5 cups raw sugar per gallon.
Have heard of others using star anise, vanilla, maltodextrin, honey, brown sugar etc.
Looking for a little advice for a first time.

I don't need less though either since I'm not using yeast to carbonate?
 
I don’t know if this will be any help, but I have a bottle of Hires extract and it calls for 3-⅓ cups/ gal. with dry ice being used to carbonate. I followed the recipe last time and force carbed it. I found it to be a little on the sweet side, but I don’t drink sodas. Others thought it was great.
I have another bottle that I plan on splitting into 3 separate 1 gallon batches to find the “sweet spot”. 😁
 
Just follow the recipe. If it's too sweet you can dial back the sugar next time. Experiment a little to get the taste you want.

Adding other ingredients can make nice root beer. Some of the extracts need a little something to add dimension. I like a pinch of nutmeg and ground clove in mine, but there are many ways to doctor it up.

Zatarain's was my favorite, but sadly, discontinued. Cook's is quite good.
