Yes, the different colors of malt extract are achieved by adding a darker malted barley during the mash to make the darker malt extract. You can do similar by using a light extract and steeping the darker grains yourself. The advantage of that is fresher flavor and more control over what goes into your beer.
 
They definitely add to the flavor. DME/LME are both made from a wort, just like you'd do with AG or PM brewing. They're just a bit plainer than you'd mash yourself.
