Reading Pete Slosberg's book "Beer for Pete's Sake". He writes originally they brewed using malt extract. Discovered this was causing everyone flatulence. Once they began brewing all grain the flatulence problem went away.

Gets me thinking what in malt extract would cause flatulence where malt doesn't cause the same?

Unless there was some type of anti-caking agent or preservatives used it likely had more to do with the type of yeast used or consumption of yeast than the extract.

I did a bit of reading on auto-Brewery Syndrome a few years back and while not to the as extreme, your gut is in a constant battle of flora supremacy. Drinking dregs just adds fuel to the far...I mean fight

I thinks it's the result of oxidized fatty acids found in malt extract. Later, during yeast metabolism of glucose, some of the electron carriers get tired and drop their electrons. These free electrons find the oxidized fatty acids and reduce them to farty acids.

I see what you did there.

That's a pretty radical concept!
