First time using hydrometer.

So I am about to start on my 5th batch of wine. In the past I have just used bare bones basic equipment. So no hydrometer. Well I finally got one and I'm a little confused. I understand how it works but I'm not sure how I decide what the starting gravity should be. The next batch I do will be a red grape that is growing in my back yard. I am shooting for a wine in the 11-12% range. Any help is appreciated.
 
Assuming that you are going to ferment your wine out all the way to dryness(not leaving any residual sugar), you'll want to aim for somewhere in the ballpark of 1.080 to end up in that alcohol range.
