I am have golden wheat ale that has been in the primary for 18 days now. The recipe says the final gravity should be 1.010 - 1.012. I measured the the gravity today to be 1.015. Do I wait another few days to bottle or should I go ahead and do it today? This is the first hydrometer reading I have done. The initial hydrometer that came with my kit was cracked and I didn't discover this until after I had cooked the wort so i want to be sure that this is correct.

thanks,

mick

I'd take another reading tuesday morning. If its still 1.015 bottle. If its dropped...keep taking until you see it stop fermenting.

3 readings the same on three consecutive days and you're good to go ahead and bottle.

Primary #1: Southern English Brown
Primary #2: (empty)
Bottled: Cream Ale, Edwort's Apfelwein

If it's a new hydrometer, I'd also check it in some cold water. If it doesn't read 1.000 (not uncommon), remember the difference, and always add (if it reads less than 1.000) or subtract (if it reads greater than 1.000) the difference from all your readings.

Why take the middle reading? If the first and third reading are the same, then the middle reading will be as well.
