Ok, I have made JAOM and am attempting the jump to BOMM.

I am a bit confused on the removing water part. Can't I just remove a gallon of water, add my honey, and then add the water back until I get to ~1.099?

Also, I keep reading different things about shaking to add oxygen. Do I do this more than once or only before I pitch the yeast?

Ok, can it be done without a stir plate?

1 gallon of honey is roughly how many pounds?
 
It is munching up sugars and nutrients!

Can I ask why feeding it three times is different than just feeding everything all of it as once? Just a random question.

Well, perhaps not a great analogy, but it fits I think.

Why do you eat three times a day, instead of having it all just at once?

Eating all of the food at once overwhelms you, and still doesn't satisfy the need for nourishment later or the next day.

Yeast need to be treated well for a healthy fermentation. Step feeding them encourages them to keep active and healthy.
 
Also,

Staggered nutrients and feeding honey keeps it from "spiking". You want the yeast to be smoothly fermenting, with minimal spikes in activity. This reduces fusel/high alcohol production and other off flavors.
