Hello, this is also the first time I will brew a stout. Just built my kegerator a month ago. I have a Red ale in one keg and one blonde on fermentation. Its a mini fridge Kegerator, It holds 2 kegs, it has double tap standard faucet. After Cold crashing and puting the beer on the keg I plan to force carbonate it. How long do I need to wait to put it on tap and start drinking it :mug: ?

Any beer is the same for me. Carb at 30 psi for 24 hours and then turn it down to serving pressure for 1 week.
 
You can drink it as soon as you want. Don't we all? :)

But it will dramatically improve over a period of weeks, stabilizing and mellowing over months. Three weeks in the cold seems to be a magic number for approaching the beer's true character, and it should get smoother and more cohesive after that, easily for a year at least.

Carbing techniques vary. I have 6 taps on the same regulator, so I just plug in a new beer and leave it at 10 psi like its roommates. Eventually it carbonates properly. See above timings for why I don't care about rushing that. Faster carb does not equal faster flavor.
 
Agree with McKnuckle. Even though my beer is carbed up in a week, it doesn't mean I'm drinking it in a week. I'll try it and see where it's at but it'll be sitting there for a few more weeks (depending on the style) until I start really hitting it.
