Took OG this morning- 1.000/.999...smells like apples but a tad too dry. Was only in primary 7 days with Nottingham.....Shocked has quickly it got down.

What are my options to add some more body/sweetness?

Wait 6 months. The flavor comes back. Backsweeten then if still needed.

So your suggesting that it would best to let it sit in the primary for a good few months after fermentation has stopped?

I would rack to secondary, top off with fresh juice and let it ride as MarkKF said. It is difficult to wait, but your patience will be rewarded. Make sure you top it off to the top. Won't hurt to add a campden/gallon to avoid oxidation.

I just did the same thing with a cider too. It's like rocket fuel. Can you add fresh juice at this point without a problem? I'd like it to be dry, but I'd like to bottle it too.

I just bottled a cider that i had sitting in secondary for the last 7 months,i added some fresh juice to it just before i pasteurized it and all is good. It had been horribly strong after a month which is why i decided to just let it sit and mellow and it did end up pretty darn good. Thought this might help.

I read that the big cider makers in England let it sit in oak barrels 6-18 months. How much can a 5 gallon oak barrel cost?

I just bought another gallon of cider. Should I rack to secondary, then add then gallon of fresh to 5 gallons total? Or will that push the SG too high?

I looked into the oak barrels. Out here its way to expensive for me since i am just starting. How awesome would that be though.

I just did the same thing. I added 1.5 gallons o fresh cider last night to stable 1.00 sg in secondary. No action in the airlock (no visual, it's in a bucket). Hoping it doesn't go badly. I set a reminder to open it in December.
