First time - Burner

I've brewed on stovetop a few times, next week though I'll be doing my first attempt on a propane burner with a full sized (8 gal) brew kettle).

Just a quick question - when instructions say to remove from heat, will just turning the burner off work well enough? Or should I setup some sort of alternate heat-resistant stand to move the kettle off of the burner onto?
 
Alternatively, if you don't want to turn off the burner, when I was doing extract I just pulled it off the burner and set it right on the patio, or on an old towel.
