I am about a week into my brew and I checked on my SCOBY this afternoon and tasted my Kombucha for the first time and it had a sweet, but sour taste, It had a nice flavor. I am not sure how long I need to wait before I start bottling. I have been checking the Ph level but I am not sure my Ph strips are good because they have been saying the ph level is 6 from day one. Now I am out of strips and I have no way to check it.

I read or seen a video saying you can start bottling when you start seeing the bubbles come up from the bottom, is this correct? Also, is pineapple juice a good juice to use for flavoring when making Kombucha?
