I've been brewing can kits five times... 2.5 gallon brews. The results are all totally drinkable and some of them even great tasting. Even when I play around a bit and added hops or 'coffee' it's fun and good.
I've now started my first recipe from scratch. Using LME and hops and yeast all purchased separately. I usually come out of my local shop with different ingredients than I was looking for (I make do with what they have). Here's what Ive done:
Rehydrated Yeast:
-250ml boiled water cooled to 105deg
-pitched and stirred 18g dry Mauribrew Draught yeast and let sit for 15m (I know it's more necessary, but I had a measurement error that only became apparent after measuring the empty container it was in).
-mixed 1tbsp table sugar with 100ml previous boiled water. Cooled to 90deg and added to yeast
-30min later it was nice and foamy (successful yeast rehydrated).
Steeped:
-0.5lb crystal malt @153deg in 2.5 gallons water
Wort:
-Boiled 6.75lb pale LME (60min)
-added 0.65oz hallertau hops (60min)
-added 0.5lb pale LME (30 min)
-added 0.4lb honey (30 min)
-added 0.25lb wheat LME (15 min)
-added 0.45oz hallertau hops (15 min)
-added 0.55oz cascade hops (15 min)
-added 0.45oz cascade hops (0 min)
-added 0.55oz hallertau hops (0 mins)
Fermenter:
-added 10L bottled water 70deg
-stirred cooled (120deg*) wort to try to cyclone and syphon the sides into the fermenter (unsucessful, much hop debris was transfered as well)
-stirred vigorously
* I couldn't cool it well by using all the ice in my freezer and several cold water baths in my tiny kitchen sink...120 was the best I could do.
** I got a bit sloppy here and forgot to pitch at correct temp... so I threw the yeast in as soon as the wort was all mixed in the fermenter. I figure it was about 90deg when I pitched... oops.. Too high, but still this yeast I hear is still good at high temperature so maybe still a win.
Fermenting:
- it has been fermenting for 2 days so far. Constant bubbling in the airlock.
-The smell is fantastic, it is fruity and sweet. I keep popping the little red cap on the airlock and breathing it in.
-I plan to dry hop with 1oz cascade, 0.5oz hallertau and bottle directly from primary in about 3-4 weeks.
