Any critiques or help with this. I was playing around and tweaked a recipe that I had used before. It's just a traditional IPA. I don't know if adding two different kinds of pale malt will do anything but their descriptions did mention that they offer slightly different flavor so I thought it might be fun to play around.

7.5 oz Caramel/Crystal Malt - 60L (60.0 SRM) 6.4 %
7.5 oz Victory Malt (25.0 SRM) 6.4 %
5.9 oz Crystal 100 (55.8 SRM) 5.0 %
2.3 oz Roasted Barley (Simpsons) (550.0 SRM) 2.0 %

1.25 oz Fuggles [4.50 %] - Boil 60.0 min

1.0 pkg Edinburgh Ale (White Labs #WLP028) [35.49 ml]

4.00 oz Oak Chips soaked in scotch (Secondary 7.0 days)
 
They look good at first glance.

What's really helpful when we review recipes if you have the % of each grain, given to you by Beersmith. It's hard to visualize 14 oz of something, and calculate the rest of the grainbill, to figure the percentage of a grain. To make it easier, leave that part on if possible.

Like this ( a copy/paste from my last brewday):
7 lbs Maris Otter (Crisp) (4.0 SRM) 36.2 %
4 lbs Pilsner (2 Row) Ger (2.0 SRM) 20.7 %
2 lbs Borlander Munich Malt (Briess) (10.0 SRM) 10.4 %
1 lbs 12.0 oz Oats, Flaked (1.0 SRM) 9.1 %
1 lbs 8.0 oz Barley, Flaked (1.7 SRM) 7.8 %
1 lbs Caramel Malt - 20L (Briess) (20.0 SRM) 5.2 %
1 lbs Caravienne Malt (22.0 SRM) 5.2 %
12.0 oz Chocolate Malt (Simpsons) (430.0 SRM) 3.9 %
5.1 oz Acid Malt (3.0 SRM) 1.7 %


In this example, I can clearly see that I"m at 10.4% cara-type malts. That helps, since you don't have to add up all of the pounds and then divide to figure the % of the recipe in order to give feedback.

I'm not an expert on Scottish ales, but a wee heavy typically has an OG of 1.070+. That looks a little light.
I'd probably leave out the roasted barley, and go with darker crystal malts and chocolate malt for color and flavor.

When I made this before I added them to secondary. I might not secondary at all and just add them the last 10 days of fermentation. I'm not sure if it makes a difference one way or the other but this is what I did before. thoughts?

You know I'll have to look that up. I originally had the og up there but beer smith told me I was way too high.

You probably have the style set to Scottish Heavy, not Strong Scotch Ale.

It looks pretty good to me (but I don't know about the oak- that wouldn't be my thing, but if you like it that would be fine). I might consider changing up a bit of the golden promise, say 1-2 pounds, for Munich malt for a bigger maltier base. I might consider increasing the hops just a tad- say, to 25-30 IBUs or so to make sure it's not too sweet in the finish.

Thanks Yooper. I'm still trying to understand all the different grains and how they effect the types of beer. I definitely don't want anything too sweet. Also not sure about the oak cubes but thought they seemed a little fun.

*12.0 oz Brown Sugar, Light (8.0 SRM) Sugar 4.3 %

*Brown sugar is to mix with gallon of first running and boil down for caramelization.
