I have 1,626g of fresh frozen raspberries in the deep freezer my mom picked for me a while ago and I would like to make a wine out of them. I was wondering if I purchased the raspberry wine concentrate from Vinters Harvest, http://www.midwestsupplies.com/raspberry-vintner-s-harvest-fruit-bases.html, and I used the 5 gallon recipe can I just add my 1.6kg of raspberries directly to the recipe? Would I need to change anything?

I would suggest going with the 3 gallon recipe for a much better taste, you should add some pectinase to it and decide if you want to add your fruit in the primary or later in the secondary to get a little more fruit taste. Raspberries being acidic, if the recipe calls for adding any acid blend you might not need to with your added berries. A very little bit of oak in this is also good. WVMJ

I was concerned that following the 3 gallon recipe plus adding additional raspberries would be too much? I would actually prefer a 3 gallon batch anyway.

To much taste:) Its really the acid levels you have to watch, if the recipe on the can says to add some you might not need to since you are adding more berries. We sometimes use the cans to make blends, like adding a gallon of plum base to a couple of gallons of elderberry must, they are fun to play with. WVMJ

I've made blackberry and gooseberry with those size cans and the 5 gal came out a too watered down for me, but I would think with your added berries it would be fine.

I'm doing a 5 gal blackberry right now with that size can plus a smaller can of puree and its coming along very nice.

Thats only 3.5lb of berries, its only enough berries for a gallon of not very strong wine on its own, not enough to make a difference in a 5 gallon batch. WVMJ
