first one gallon batch

Any tips and advice? Its been fermenting for two weeks now and is still bubbling quite a bit, it also has a one inch layer at the bottom. When should i siphon it to a new bottle?

let it keep going until you bubbles slow down to about 1 a minute . . . no reason to re-rack it until then
