i am going to be using a champagne yeast but I am not sure how much to use. I have 4 packets. i would prefer to save at least one of them for another project.

How much did you brew? 5 gallons? 1 gallon? somewhere in between?

Or did you go bananas and brew 10+ gallons?

How much mead are you making? If you are doing 20 gallons, use all 4. If you are only doing a 5 gallon batch, one package will suffice. (You could probably get away with using 4 packs for 25 gallons, though.):D

i did a 4 gallon batch. so is it safe to say roughly 1 packet per up to 5 gallons (for future reference)

If it a dry (powdered) yeast, it is a wine yeast. Those are made for up to 6 gallons. You're fine using 1 packet.
