Ok, been brewing only beers, but have now attempted my hand at a hard cider. I currently have two one gallon jugs fermenting. One was made with adding brown sugar, the other I added frozen apple juice concentrate. Pectic enzyme added to both for clarification. It's been 2 weeks and it appears fermentation has basically stopped. I wanted to add some cinnamon to each. My question is, do I need to add the cinnamon to a secondary and wait OR can I simply add the cinnamon at bottling? Also, how much cinnamon for 1 gallon?

What kind of cinnamon are you planning to add? Stick, ground, extract? I think the only option I would add at bottling is extract.

I have never added cinnamon to a brew before, however; I do know from cooking that cinnamon goes A LONG WAY. I would be-careful since its only a one gallon batch. Let me know how it turns out and what you ended up doing.
 
was going to add ground, but perhaps extract is a better option.
 
Usually we do whole cinnamon sticks. Ground never really mixes well. I did one stick in a gallon for 2 weeks and it was very mild, would go a month next time.

Was this is then secondary or primary?
