First cider experiment, looking for help on the next round

Ok so we finished our first cider mix. None of us have made cider before. We found so many different recipes and went with one, but after all is done it kind of tastes like white wine and isn't strong at all. We were thinking maybe it was the amount of sugar we put into the mix because some say a pound of sugar per gallon and others will say a cup per gallon. What is correct or does it depend on how strong you want it? We are planning on going another round when our apple connection is ready but were looking for a good recipe .... Anyone have any recommendations?

I think the recipe will all depend on what you are looking for. You might consider just straight apple juice with an ale yeast as a control for how to build up to what you like. The ale yeast, in my opinion, keeps it from tasting like wine. But other's will swear by wine or champagne yeast.

It won't be over the top in alcohol and it won't have anything in it to mask the flavor of the juice. From here you can always add dextrose to boost the ABV or go all out and add fruit for flavor.

GF, I agree. I have my first batch in the primary right now. I'm looking forward to bottling mine this weekend.
