first cider critique 16 months

Just thought i would post my experience.

First cider ever.
5 gallon fresh cider from mill
3 lb light brown sugar
Champain yeast, dry.

Brought juice up to 180 F for 30 min
Mix in sugar.
Cool to 65 F
Pitch rehydrated yeast

Ferment 21 days

Bottle 5 oz corn sugar

Est 11% ABV


Bottles at first 2 to 4 months old, very alcoholic verry dry, cant taste apple at all.


4 to 12 months old, slightly less dry still not a lot of apple, and alcohol still prevelent.

16 months. WOW! This stuff must of just come into its own. Real nice champaign fizz, always did have fizz, but now just seems more "refined"?
Not dry anymore, dectect a slight sweetness, and a tart apple mouthfeel.

THIS STUFF I AWSOME!

Was super simple to make, andneat to see how it progressed in its profile.

Where I think i messed up.

Fermented in only 21 days, this years batch in second. ary now 5 months, thinking of botteling soon.

Used 32 oz bottles to bottle. Way to much for 1 day. Losses fizz over the next several days in the fridge, before I can finsh it. Next batch all 12 oz bottles.

Sampeling too soon. OK this was my first batch, and I was chomping at the bit..
Next batch first try is 6 months. Gota be patient. Still have about a gallon from first batch, will have to ration.
