Just brewed (correct term?) my first batch without a kit and I wanted to say thanks to everyone on the forums. All you guys who post tidbits to help us newbies along, I thank you! Picking up a little here and there made the overall experience much smoother.

Just pitched the yeast and put on the air lock, fingers crossed I end up with something drinkable!

It's fermenting at around 64-66F, but I do not know how "hot" this yeast will get. I had a kit last time that jumped almost 10 degrees.

Recipe-wise if this turns out decent I'll post in the recipe thread but here's what I used for this 3gal batch:

3.3# Belgian Wheat LME
0.5# Honey Malt
0.5# Clover Honey (at flameout)

0.5oz Saaz (45min)
0.5oz Saaz (15min)

Danstar Munich Yeast

I tasted the wort after my gravity reading and it tasted pretty dang close to what I wanted. It finished pretty strong on the hops but I'm sure that'll mellow out.

OG was 1.044 (predicted to be 1.050 on one site, 1.046 on another). May have pitched the yeast a little warm but Im sure it'll turn out fine.
