My beer hit the 2-week fermentation mark last Thursday, so I took a reading. Let it sit over the weekend and took another reading last night (Monday) and it was the same.

Now, I know this means it should be safe to bottle, but should I cold crash it now or let it sit a few more days to help it clean up any additional byproducts?
 
It would be unusual for me to not cold crash by the two week mark. But ultimately taste is my guide. If it tastes about right, go ahead and cold crash.
 
Crash it 2 days at 40 degrees and most everything will drop out. I've only recently begun crashing but, what a difference it makes.
