I brewed my first all grain and bottled a week and a half ago. I just tasted and carbonation was great, smelled nice too. The only problem is that the body and taste is not there. Could this have something to do with my mash? If it sits longer in the bottle will the flavor improve?
 
Chinook all grain from Northern Brewer

I used tap water...

10 lbs rahr 2 row
.75 belgian caramel pils
.25 briess caramel 120

.75 chinook at 60
.5 chinook at 10
.25 chinook at 1
Safale us 05

Mash 152 for 60 min
Batch sparge at 170 for 10 min

Fermented in my fermentation chamber (fridge with temp control) at 70 degrees.

Dry hopped with 1 oz of chinook and 1 oz simcoe

OG of 1.054
FG of 1.01

I measured an efficiency of 75% using a calculator

2 weeks primary 2 weeks secondary

A little less than 2 weeks in bottles so far.

I feel like I hit all of my marks, carb is great smell is great, taste lacks.
 
was this 5 or ten gallons? Im assuming 5? Grain bill seems like more than enough for 5 ya sure you temps were dead on? Grind was good? Made this before and it is different this time?..if this was 10 the grain bill is really light especially at 75%..just my two cents, lots of variables here
 
Sorry, it was 5. I tasted throughout the process and it had a nice bitter stronger taste. Does bottle condition really change the flavor over time? Should I be storing the bottles in a different room, current room about 75?
 
Did you mix your priming sugar in well?? Check another bottle if you havent done so already. Conditioning can chaneg flavors but usually not like you are describing
 
I find that some beers will carbonate in about 2 weeks (I never tried one sooner) others take longer. ALL of my beers tasted better at 3 weeks or longer. Some were significantly better.

So, give it some time.

Seems to me your ferm temp is a bit high. I'd think 64-66 would have been better.

So there is hope! Lesson learned, don't taste before week 3!

When starting there is some benefit in trying your beers too soon. You will learn how they change with age.

That said, I have a big beer in keg now. I force carbed and waited another week. I tasted it and it was very sweet. About a week later I tasted it and it may be infected. It tasted bad! I am going to wait another week and try again. After that ???

This is sound advice.

I've brewed seven all grain batches now and I always feel compelled to try one at about two weeks. Most have been fine but all end up tasting better after four weeks. Some, as state above, changed significantly.

Or it could be your recipe wasn't aligned with your expectations. I've had that happen too.
