I was a little industrious and wanted to do an imperial IPA.

15 lbs two row pale
2 lbs crystal 60L

OG 1.081 (actual 1.079)
SRM 14
Mash efficiency 65%

Hops
40 mins 1 oz Warrior pellet
30 mins 1 oz chinook
10 mins 1 oz Sterling

Mashed at 152-150 for 60 min
10 min Sparge at 167

Wyeast American Ale II smack pack.

Will dry hop last seven days.

Everything went as planned...expecting to have to wait maybe 6 weeks to bottle.

Any recommendations on priming sugars if I don't break down and keg by then?
Boil 6.5 gallons

Why 6 weeks? Primary 2 weeks, dry hop 1 week, bottle.

As far as priming sugars go, just use corn sugar. IMO you don't really get much out of the minuscule amount of x priming sugar at bottling, especially in an IIPA where the hops are going to dominate.

I do an AG Imperial IPA, a Pliny the Elder clone. This has become a staple brew for me even though I've never had the original.

Last month I brewed it: OG 1.076 to FG 1.018, 2 weeks in conical fermenter (ie no secondary), dry hop, keg, condition for 3 weeks at 8-10 psi, enjoy.

Why bottle after 6 weeks?

Drink IPA's when they are young and watch them develope......IMHO.

Long legs means more room for beer!

Not much hops, and way too much crystal, for an IIPA. But it looks like a very drinkable beer. You won't have the hop flavor and nose that an IIPA is noted for, though, and will two pounds of crystal you may have some residual sweetness that I wouldn't expect in an IIPA.

I'd ferment two weeks, dryhop for 7 days, and bottle on day 21. Assuming the FG is reached in two weeks of course. I assume you used a couple packages of the yeast, or at least a big starter, so it should be ready soon.

86 IBU's I'm going to dry hop cascade for aroma. It may be done sooner, I just read it can take a while for big beers like that to even out. Thanks for the input.
