My wort started fermentation about 12 hours after yeast pitch. It's currently sitting in a room and the wort is fermentating at about 78 degrees. I know this is high and when I get home I'm going to do the shirt method with a tote bin but will the wort taste different after being in that kind of heat after only 24 hours? Or am I still good to go??
