hey all,
I have been going back and forth about how I want to finish my cider, and I have decided I want a still sweet cider.
So here is the deal, I took some apple juice and sugar and made a basic version (my first try). i added yeast nutrient, yeast energizer and some lalvin D47, and it took off. I started with a OG of 1.070. About a week later checked again and i checked again and the FG was 0.998.
So i want to sweeten it, and need some help from the experts.
My plan is this:
I was planning on degassing, to get some of the "co2" flavor/smell out. and then add some potassium sorbate, and some campden tablets and let it sit for a day. After it has been stabalized i want to add some apple concentrate and some sugar to sweeten to taste. After sweetening i was gonna bottle it and throw it in the fridge right away. Does this sound right? Will i have bottle bombs? and is this the best wayh to ensure a still cider? phelp is appreciated. thanks
 
after adding the potassium sorbate, you shouldn't have an issue with bottle bombs(carbonation). I would try adding apple juice rather than concentrate and sugar to sweeten. it will add volume and lower abv, but has a better chance of not tasting too processed. I don't know that I'd go with the degassing, introducing owygen at this point will likely add wild yeast that will go after the added sugar. again, the apple juice will mix easier without adding oxygen.
