Well....after many trial and error.....I finally got a cider that I LOVE!

I used sweet mead yeast.....2.5 gallons of past. apple juice and 1/4# corn sugar for a bit more kick!

Came out nice and dry and just enough sparkle!!!

I am gotta bottle another 2.5 gallons next week....same as the above....but with a Hefe yeast this time!

I guess I found out that simple is usually the best!
 
About 8 weeks in the primary....but I bottle carbed......one week the bottle and room temp and another in the fridge....
