So I finally have a pipeline going! Hopefully I can keep it up. The 3 carboys are Chinook IPA, Cologne Kolsch, and Irish Red Ale. 2 kegs are a British Bitter and Honey Weizen. The keg in the fridge is Liberty Cream Ale.

I'm a little worried about the temp of the ones fementing. Is 75 a little too high?

in my opinion, definitely too high of a temp, especially for the kolsch. i like to ferment kolsch in the upper 50s or low 60s and what is the other yeast, 1056/001? that can probably tolerate 75, but i still think it's too high. i normally ferment that yeast strain around 65, but that's just me.
 
Yeah, most yeasts are not happy above 70 at the max.
I'm not sure what type you used, but the manufacturer usually says what temp to keep the yeast at for maximum happiness.

I used Cologne Kolsch w/ White Labs Kolsch Ale 029



I put the carboys in the bathtub with about 4" of water. That should cool it down huh?

Well if you're new to brewing, it's not the end of the world if you fermented too high. There will be hot and fruity esters that will develop, but with some aging you might not notice it. But I notice you're in Texas: I would agree that most yeasts like temps below 70. It's only going to get worst when you're approaching summer temps there!!:drunk:

As for a waterbath, the best surefire way to figure your temps is to slap a fermometer on each fermentor is a good investment. Check and see how your waterbath is now: chances are you'll have to add frozen water bottles or some sort of circulation system during the summer months. *Edit* I only now see that you do have fermometers! Go by what they say: if your temps are still above 70 in a waterbath, you should at least be adding frozen water bottles.

Ha! I didn't even notice that. I was too busy looking at the beer. But that's hilarious!

For OP: Looks good man. A nice variety. Hope you're able to get a handle on the temps so you get a beer you personally enjoy.
